Gofio is one of the most deep-rooted, ancestral foods of the Canary Islands and continues to be the staple food of many of their inhabitants. This flour made from toasted cereals is present in an endless number of dishes after undergoing a roasting and milling process. In former days it was made by hand, with the help of stones intended for this task: millstones. Today electric mills are employed, although some areas still conserve ancient water mills.
This natural product contains neither preservatives nor colorants; you can eat it in many ways in either sweet or savoury form; it is used in desserts, breads, broths and more. Here is a brief list of dishes for you to enjoy.
- Berrendo: gofio kneaded with water and small pieces of cheese.
- Cabrillas: spoonfuls of powdered gofio to accompany wine.
- Rala de gofio: dissolved in broth, milk and even wine.
- Escaldón: gofio scrambled with scalding stock.
- Revuelto: gofio kneaded with scalding water or stock.
- Gofio bread: a roll made from gofio with water and salt.
